Orange Honey Mustard Roast Chicken

Served this for our guests weeks ago...
Hubby's secret recipe
Basically, it contains an orange, honey, mustard and some dried herbs. Anyway, the chicken was really nice and juicy. We roasted the chicken for an hour. Cover the top with an aluminum foil and uncover it just 20 minutes before the cooking time.
Walla... serve with some salad and mash potatoes or with some rice.

Ayam Goreng Berempah

Resepi ni amik dari Cik Wan Taipei. Sedap tau ayam goreng berempah ni. Sesuai dimakan oleh semua lapisan umur... hehehe. Oki doki, resepi di bawah ini adalah kopi pes from Cik Wan's blog, minta halal ye cikwan.

Bahan:- 10 ketol kepak ayam/ 1 sudubesar serbok kunyit/ 1/2 biji bawang besar/ 3 biji bawang putih/ halia sebesar setengah ibu jari/ 3 sudubesar serbok kari ayam/daging / 1/2 cawan air asam jawa/ 1 sudubesar gula/ 1 sudubesar garam@secukup rasa.

Cara:-Bersihkan ayam dan gaulkan dengan kunyit dan garam, ketepikan. Kisar kesemua bahan2 yang lain. Tuang ke atas ayam dan perap lebih kurang 1 jam sebelum digoreng hingga gareng.

June Bank Holiday


Salam to all...

Hope y'll are keeping well. Alhamdulillah we're back! Ah... I really missed you all so much. Anyway, our holiday was so great and hectic but here is great also. It's summer time. Plenty of sunshine. Flowers blooming, birds singing happily... Everybody is busy... renovating, cleaning, painting, gardening, etc... and some leaving for holidays! Everyone is happy and smiling.

This is the perfect time for picnic and bbq. We had our bbq last weekend during the bank holiday and here is one of the dish.

This Ayam Percik recipe was from sajiemas@myresipi. Thanks so much for the lovely recipe and here is the recipe that you can try. I have altered the recipe to suit my taste.

Ingredients:
  • 2 whole chickens (cut and wash)
  • 500 g onions
  • 50 g ginger
  • 50 g galanggal (I just put a slice of it)
  • 50 g garlics
  • 5 lemon grass
  • 2 cups of sugar (I reduce the amount of white sugar and add some brown sugar)
  • 3 tbsp Maggie stock powder
  • Blended dried chili - up to your liking
  • 100ml Chillie sauce
  • 500g coconut milk
  • Salt
  • * I put some cumin and fennel powder
Methods:
  1. Blend the onion, ginger, galanggal, garlic and lemon grass and mix with the other ingredients except chicken.
  2. Cook in a pot until the mixture bubbling.
  3. Let it boiling for a while, then add the chicken.
  4. Let it simmer until the chicken is half cooked.
  5. Toss the chicken and let the gravy simmer till thicken.
  6. Prepare the bbq burner.
  7. Put the chicken into the thicken gravy, make sure the gravy coating the chicken.
  8. Bbq.
  9. Cook till golden.
  10. Serve with the leftover gravy.

Thai Green Curry


Salam...

Teringat masa first time ternampak pes Thai Green Curry ni kat Lidl dalam jar and terus beli and main buat je tak tengok resepi mana2 pun...hasilnya phooh pedas berdesing....mana taknye, I poured all the paste from the jar into the pot... sampai tak leh nak makan langsung, pedas yang amat... this time was my second time buat after ternampak kat blog zaliana. Resepi ni lebih kurang macam resepi masak lemak cili api je cume ada lain sikit dari segi rasanya... cubalah kawan2... Sedap tau.. Resepi Kari Hijau Thai ni senang je... Jom tengok macamna nak masak, sebelum tu resepi ni c/p dari blog Jurnal Rasa Thanks zaliana.

Thai Green Curry: sumber dari Brilliant Chicken Recipes
Bahan-bahan:

1 sudu besar minyak masak
2 sudu besar pes kari hijau
400 ml santan pekat - ain guna separuh je :P
600 gram ayam-potong kecil
230 gram rebung -ikutlah nak letak banyak mana pun
1 sudu besar sos ikan / nampla
6 helai daun limau purut
2 sudu teh gula melaka
1 batang serai, diketuk
2 sudu teh lada hitam yang segar
200 gram kacang panjang - tak letak takde stok
1/2 cawan daun selasih - tak letak, ganti dengan pegaga
1 1/4 cawan air
Cara-cara
1. Panaskan minyak di dalam kuali. Masukkan pes kari hijau dan kacau hingga berbau wangi.
2. Masukkan ayam dan serai, biarkan sehingga ayam empuk.
3. Kemudian masukkan air dan sebahagian dari santan. Biarkan sehingga mendidih. Kemudian, masukkan gula melaka, sos ikan, daun limau purut dan rebung.
4. Kemudian tambahkan lada hitam yang masih segar dan kacang panjang serta baki santan tadi. Kacau sekali sekala.
5. Bila sudah mendidih, keluarkan daun limau purut dan serai lalu masukkan daun selasih. Sedia dihidang.

Chicken Teriyaki

How's ur day? Mine is ok... Everythings fine.

I know most of you in Malaysia must be in some kind of holidays mood, right!. So, this is the time to venture with new recipes!


Ok now, come to the picture above. I want to share this chicken recipe. When talk about chicken, sometime there always be the same recipe to cook for our lunch or dinner.

So, guys why not try this Chicken Teriyaki recipe. The chicken was very nice, sweet and moist and was agreed by my hubby saying 'Ayam ni sedaplah! Emm...' Yummy!

Chicken Tandoori


A couple of days ago, I called kak Ja in Cork. We talked about her family trip to Aran Island last two weeks. Anyway, in our chatting we did discussed about one dish that I've been thinking to make it for our lunch on the next day. So, finally after chatting with kak Ja, I started with the project. Ooops, sorry..... forgot to tell you what was the dish, it was Chicken Tandoori.It is an easy dish to make overhere besides the ingredients are easily obtain in any halal shop. Let see how I make my Chicken Tandoori.

Ingredients: (for 4 people)
  • 3 chicken legs (skinned, cleaned and slit)
  • Salt
  • Turmeric Powder
  • Chili Powder
  • 2 tbsp Plain Yogurt
  • 3 tbsp Tandoori Powder
  • 1 tsp Garam Masala
  • Sprinkled Garlic powder
  • Sprinkled Paprica
  • Some Lemon juice
  • Salt
  • Black Pepper
  • 1-2 tbsp Olive oil
  • 1-2 tbsp water
Methods:
  1. Cover the chicken legs with some salt, turmeric powder and chili powder. Keep aside.
  2. In a small bowl, combine the other ingredients together and stir until form a thick paste. Pour the paste into the chickens and cover the chickens until well coated with the paste.
  3. Place the chickens in a roasting tin or pyrex. Cover the roasting tin or pyrex with cling film and leave it to marinate for couple of hours. (I leave it overnight in a fridge)
  4. When you want to bake it, preheated oven to 200C.
  5. Tear out the cling film and drizzle with some olive oil if necessary and pop into the preheated oven for 30 minutes or until cook. (If you like it with some gravy, pour some water on the chickens and sprinkle some salt).
  6. Turn the chicken halfway through.
  7. Turn it to Grill mode during the last 10 minutes.
  8. Served with rice, chapati or naan bread.

Nasi Lemak Pandan Berhalba & Inche Kabin



Salam everyone, sorry for being quiet for the past few days. We were away. Just came back from our 'Discover West Ireland' yesterday night. We went to county Galway and part of county Clare and Ballinasloe for 3 days and 2 nights. We spent 2 nights at one of the B&B (Bed & Breakfast) in Galway near the Eyre square and last night we managed to visit Joayee's family. The trip was hectic but enjoyable. I have few photos to share in my next entry, so be patience.

This was our 'bekal' to Galway on last Tuesday. I made this Nasi Lemak Pandan and 'Inche Kabin' or Ayam Goreng Kari by CMG, Potato Curry and some 'Sambal Bilis'. Here are the recipes:

Nasi Lemak Pandan
  • Basmathi rice - clean
  • Coconut milk + water
  • Fenugreek (Halba)
  • sliced onion
  • sliced garlic
  • sliced ginger
  • salt
  • sugar
  • drops of Pandan's flavor
Methods:
  1. Add everything into the rice cooker and cook as usual.
  2. Once cook, use fork or chopstick to gently stir the rice.
  3. Serve.
Click here for Inche Kabin or Ayam Goreng Kari recipe. It was flavorsome. For the Potato Curry, I just used the leftover paste from the 'ayam goreng kari' and made the curry as usual. Sambal Bilis.... I think all of you has your own style and preference.

For us, the combination was really good! alhamdulillah.. syukran CMG for the lovely recipe.

Fried Chicken Meal Ala KFC



A few days ago, we had craving for KFC. Since the price of KFC has gone up (I think) and there is no HALAL KFC over here, we decided to make our own version of fried chicken meal ala KFC. Here is how I made my Fried Chicken Meal ala KFC.

Fried Chicken
Ingredients:
  • Pieces of chicken (washed and rinsed)
  • *Kikkoman soya sauce
  • *Turmeric
  • *Ground pepper
  • *Salt
  • Kentucky flour (or any tempura flour that you have)
  • Paprika powder
  • Chili powder
  • Egg
  • Oil
Methods:
  1. Marinade the chickens with the (*) ingredients for an hour. (You can also put some fresh milk to tender the chicken).
  2. In a clean seam plastic bag, add the Kentucky flour, paprika, chili powder, salt and ground black pepper. Close the seam and shake well. (You can also add some curry powder if you like).
  3. In a small bowl, add the egg and beat gently with a fork.
  4. Remove a piece of chicken and add into the egg, let it well coated. Then, drop into the flour mixture bag. Close the bag and shake so that the chicken well coated.
  5. Repeat the step 4 again to the same chicken to make the coating thicker.
  6. Drop in a hot oil. Deep fry until golden.
  7. Served it hot with mashed potato and coleslaw.
Mashed Potato:

Ingredients (2-3 persons):
  • 2 potatoes (skinless, washed, cubed)
  • water
  • 1tbsp of butter
  • salt
  • fresh cream / whipping cream / fresh milk
Methods:
  1. Boiled the potatoes until soft and tender.
  2. Drain the water.
  3. Add butter, a bit of salt and some cream / milk.
  4. Mashed.
Mashed Potato's Gravy from daunpandan@myresepi.com

Ingredients (for 3-4 people):
  • 1 celery-rough blend
  • 1 onion-rough blend
  • 5 tbsp Maggie chicken stock liquid (I used 1 cube Maggie chicken stock)
  • 650 ml water
  • 40 gm butter
  • 20 gm plain flour
  • 1 tbsp oyster sauce
  • 1 tbsp tomato sauce
  • Thick Soy sauce
  • Ground black pepper
Methods:
  1. Boil the chicken stock, celery and onion. Let it simmer for 10 minutes.
  2. Sieve into a small bowl.
  3. In a small pot, heat the butter until melt and add the flour.
  4. Reduced heat, keep stirring until it won't sticking at the pot.
  5. Add the sieved broth and continue stirring so it won't curdle.
  6. Add the oyster sauce, tomato sauce and a few drops of thick soy sauce (for color).
  7. Season it with ground black pepper.
  8. Cook until you get the desired thickness of the gravy and off the heat.
  9. Drizzle the gravy on top of the mashed potatoes.
Thanks to daunpandan for sharing the gravy's recipe, the gravy was great and almost similar to the KFC. So, to all my friends out there, happy trying and enjoy!

Chicken Tofu



This is the recipe that I want to share with you, I call it Chicken Tofu. I know there are those who don't like the tasteless of tofu, like my hubby, but this is the recipe that you can't resist it. It's simply easy and delicious, even my hubby agreed with me. So, here is the recipe that you can try.

Ingredients: (~25 balls)

500g fresh tofu - mashed
1 small diced boneless chicken legs (or 1 chicken breast)
1 onion spring - sliced
Celery leaves - sliced
1 onion - diced
1 chili- diced
1 tsp chicken Maggie stock powder
3 tbsp plain flour
Oyster sauce
Paprika powder
Ground black pepper
Salt
Sugar
Oil - for deep fry

Methods:
  1. Mix all the ingredients together.
  2. Season it well.
  3. Heat the oil.
  4. Wet your palm, take about a tablespoon of the mixture and shape into a small ball and drop into the hot oil. (You can just use 2 tea spoons for this step)
  5. Repeat with the remaining mixture.
  6. Deep fry until golden in color.
  7. Served with chili sauce.
P/S: You can put this chicken tofu in any dishes like mee curry or spaghetti. You'll know better after you try the recipe.

Crispy Baked Chicken



This was what we had for our dinner a few days ago... Initially I want to make Crispy Fried Chicken.. but, my hubby preferred it to be baked instead of fried... less oily he said... anyway, here is how I make my Crispy Baked Chicken... the original recipe was from kak aniza, who taught me long ago... (I don't know whether you remembered it or not) how to marinade the chicken to make the flavor taste good before frying it. I find it very true. To kak niza, thanks for sharing the knowledge or tips... We had this with mashed potatoes and coleslaw.

Ingredients: (For 2 -3 persons)
2-3 slices white bread
2 Chicken Legs (any part you like) - washed and rinsed
Kikkoman soy sauce
Fresh Milk
Sea Salt
Ground black pepper
A bit of dried thyme

Methods:
  1. Marinade the chicken legs with the fresh milk, kikkoman soy sauce, thyme, salt and pepper. (You can leave it a few hours)
  2. Meanwhile, in a food processor, grind the bread into fine crumbs and mix with a bit of salt (you can also put some paprica and tumeric powder if you like) and keep it aside.
  3. Preheat the oven to 200C. Place a baking sheet on a roasting tray and pour a bit of oil on the baking sheet. (I used olive oil).
  4. Remove a piece of chicken from the marinade mixture and drop into the breadcrumbs.
  5. Place on the oiled tray. Repeat with the remaining chickens.
  6. Bake for 30-40 minutes or until cook, halfway cooking, rotate the tray to cook it evenly.
