Chilli Plum Mussel

It was sometimes since my last entry... It was not that I did not cook or starve myself all this while... it was just that, we did not make anything special worthwhile to share in this blog (malulah nak post makan nasi dengan telur goreng dalam ni..hehehe..)

This was the first time I bought fresh mussels (berjanggut lagi uuu...) so, it took my hubby to scrubed them clean... next, bring a pot of water to boil and drop the mussels. Once they started 'smiling' (open) at you, toss them. Open each mussel and clean a bit with clean water to get rid of any remaining dirt... don't forget to pull out the 'beard'...

Next you can have the cooked mussels with any dressing you like. I made this chilli plum sauce to drizzle on top of the mussels. Here is how I make my chilli plum sauce...

Ingredients:
  • 2-3 cloves of garlic - crushed
  • 1 shallots - sliced
  • 1-2 tbsp of dried small shrimps (udang geragau kering)
  • 1-2 tsp of ground chilli - depends on your liking (if you want it hot, you can put more)
  • 1 tsp chilli sauce
  • 1 tsp sweet chilli sauce
  • 1 tbsp plum sauce
  • 1 tsp of fish sauce
  • salt
  • sugar
  • coriander leaves to garnish
Methods:
  1. Heat couple of tablespoon of cooking oil in your hot pan.
  2. Fry the shallots for a while and put the crushed garlics...let it fry till a bit brown.
  3. Put the dried shrimps, ground chilli and pour all the sauces.
  4. Keep stirring for a while.
  5. Add some water if the gravy was too thick.
  6. Season it with some salt and sugar.
  7. Give it a taste..
  8. Pour the gravy on the mussels and served with some chopped coriander.
  9. Nice to eat as a starter or as a main course with some rice.
Enjoy!

Tuna Burgers

This recipe makes soft and moist burgers that are delicious with rice... I think back home in Malaysia we call it 'bergedel'... You can use any kind of fish (haddock, coley or whiting) but if you use fresh fish, you have to steam it first before crumble it coarsely...

Ingredients:
2 potatoes - peeled and washed
half cup fried onion
1 tin of chunk tuna in brine
some spring onion-finely chopped
some fresh coriander / celery leaves - finely chopped
1 chilies - finely chopped (I omit this because don't have any stock)
salt
fresh ground black pepper
1 cup fresh white breadcrumbs
1 egg separate the yellow and white
Vegetable oil, for shallow frying

Methods:
  1. Slice the potatoes thinly and deep fried until lightly golden. Toss the oil and let it cool.
  2. Mashed the potatoes.
  3. Sieve tuna's from the brine and crumble it coarsely in a large bowl, using a fork.
  4. Mix in the mashed potatoes and all other ingredients except for the white yolk and the breadcrumbs.
  5. Season with salt and ground black pepper.
  6. Knead well by hand until the ingredients are thoroughly combined. Divide the mixture into 4 large balls or 8 small balls equally.
  7. Take one ball and throw and press it from one hand to the other a few times to remove any air.
  8. Then shape it into a 2 cm thick burger. Repeat with the remaining balls.
  9. Heat oil in a frying pan (it's up to you either want to deep fry it or just put a little oil)
  10. Dip the burgers in the white egg one by one, then coat with the breadcrumbs.
  11. Shake and let it well coated and repeat with the remaining burgers.
  12. Fry over medium heat until golden browned on one side, then turn over.
  13. Place the burger on the kitchen towel, let it set and served.
  14. Serve as an appetizer or as a side dish, with chili sauce.
