Buns



Salam and spring greetings to all...

After a long pause of inactivity, I have decided to warm up this blog with my usual BUNS! Yummy!

Besides rice, noodles and pasta, we both love eating any kind of bread base, like buns, pizza, paratha, naans, bread loaf and many more...

Here is the buns that I made with Sambal Ikan Bilis (Dried Anchovies with chillie) and some with Sardines and mayo fillings... our favourites of course!

Roti Naik

Hi guys, sorry for not keep you up to date with my recently project... I'm not so well since I'm coming home from hajj... anyway, thanks for all of you who kept wishing and praying for us... Jazakallahu khair.. alhamdulillah kami berdua selamat menunaikan haji... and now everything is back to normal... so how are you my friends? Hope you're keeping well dear...



--->>Anyway, want to share this roti recipe... nak macam roti benggali kat Penang... teringat kat rumah...huhu... tak sabarnya nak balik Penang... This recipe was from Mama Fami's fp. Thanks mama for the lovely recipe. Below is the copy paste recipe from mama... Halal ye ma...Thanks ma

Ingredients :

700g high protein flour
50g shortening
200g lukewarm water
200g evaporated milk / fresh milk

100g castor sugar
1 teaspoon salt
1 packet instant yeast (11g)
2 nos egg
a bit of margarine

Method :

1. Sift flour into a mixing bowl. Add in yeast, sugar, salt and eggs. On the mixer.
2. Pour in evaporated milk and lukewarm water a bit at a time until just mixed.
3. Add in the shortening and continue kneading till a soft and smooth dough is formed. Add more water if needed.
4. Make into one round ball and leave to prove till double the size. (For me, I skip the step 1-4, I put all the ingredients into my bread machine, just press the dough menu and press the on button...walah)
5. Punch down the dough to release air and make into small balls. Arrange in a greased pan and let it prove again till double the size.
6. Bake in a preheated oven at 180 C for 20 to 30 minutes.
7. Once out of the oven, brush the top with margarine. Serve with curry or serikaya or jam or whatever to your likings.

Bun Sambal Ikan Bilis



Salam Ramadhan to all. This entry is actually a request from kak Aniza for my Bun Ikan Bilis that I baked a few days before Ramadhan for Melani in Lucan. I baked extra to give it to kak Aniza for her and family to thank their kindness for bringing so many things from back home for us.. Thank you so much sis. To kak Aniza, I used the same recipe as my buns before but I added 1 tsp of bread improver and 1 tsp of bread softener. . I thought that make the buns so soft and yummilicious... Sardine Curry Bun



I made this for our dinner yesterday. I have been keeping this bun recipe for months. Thanks to my best friend Juli. Her mother passed away recently, please make doa' for her. Al-Fatihah.
The texture of this bun was spongy but solid... I think it's best taken when still warm. Here is the recipe if you like to try.

Ingredients (for 12 buns):
  • 120 ml fresh milk
  • 50 g egg
  • 300 g flour bread
  • 3 tbsp sugar
  • 1 tsp salt
  • 60 g butter
  • 1 tsp dry yeast
Methods:
  1. Put all the ingredients in the bread maker, and on the dough setting.
  2. Knock the dough to release the air.
  3. Then, shape to 12 equal balls.
  4. Take one ball, flat it and put the filling in the centre.
  5. Close it tightly. Repeat with the remaining dough.
  6. Let it prove until double in size.
  7. Sprinkle some water on the dough.
  8. Put in the oven for 12 -15 minutes in 180 C.
Filling: (This recipe is from Ah Mat Gebu's blog, Thanks Cik Mat. It suit the bun)
  • Sardines in tomato - mashed them
  • 1 potato
  • 1 onion - diced
  • 1 garlic - crushed and diced
  • slice of ginger
  • cumin and coriander seeds
  • 1-2 tbsp fish curry powder
  • curry leaves
  • tamarind juice
  • water
  • salt
  • sugar

Methods:

  1. Peeled the potato, washed and diced.
  2. In a hot pan, pour a little oil, fry the onion, garlic and ginger until soft.
  3. Add the curry leaves, little bit of cumin and coriander seeds and the fish curry powder. Add some chili powder if you like.
  4. Pour some tamarind juice and add the diced potatoes. Add some salt and sugar.
  5. Pour some water and let it simmer a while.
  6. Add the sardines. Taste it.
  7. Simmer until the gravy dry out.
  8. Off the heat and let it cool before you put into the dough.

Tuna Buns



Here is the Tuna Buns that I made last night for our dinner... Thanks to my best friend's Juli Nadia for sharing the recipe... Sorry, for keeping you waiting for the news of your recipe... Anyway, we love it very very much. Basic dough was similar to the hanieliza's recipe... Just with tuna filling. For you out there please enjoy the photos... Cheers!

Salam to all... Here is another project that I made recently... I used the same recipe like my last entry for buns... From one dough I got 28 cups... Half was cinnamon rolls and the other half was red bean rolls... Sorry for being quite off late...
