Chocolate Chips Muffin

Last Sunday, while my hubby was out to the Gym, I received a phone call from Kak Ja, she invited us for bbq at their house at 5 o'clock. When looked at the watch, it was half past three, I had about an hour to cook something for kak Ja's family and their guests. So, while waiting for my hubby to come back from the gym, I managed to bake this muffin to bring to their house. This muffin was very easy and fast to make. I think my oven temperature was quite hot and I over baked them. The texture was a bit dry but the taste was ok. I copied this recipe from maklang's fp. Thanks mak lang for the recipe. Will try again this recipe next time, insyaAllah. Alright, for you out there, here is the recipe if you want to give a try.

Ingredients: (20 muffins)

• 6 medium eggs
• 150g chocolate chips
• 250g unsalted butter - melt
• 50g coco powder - sift
• 200g icing sugar - sift
• 200g plain flour -sift
• 2 tsp baking powder - sift

Methods:

1. Whisk eggs until bubbled (no need to use mixer).
2. Then, add all the sifted ingredients (flour, icing sugar, baking powder and coco powder) and mix well.
   
3. Next, pour the melted butter and chocolate chips. Stir until well combine.
   
4. Pour 3/4 of the mixture into the muffin cups.
5. Bake at 170C for 30 minutes or until cook (depends on your oven).
